Good eat:Lemon spice baked fish recipe

Lemon Spice Baked Fish (or Chicken Breast or Salmon or meat of your choice)
w/Green Beans

Now here's the recipe in her own words! Enjoy!

"You will come to see that you can come to achieve this healthy delectable in about 45 minutes.

Ingredients:
1 Lemon
Whiting Fish (up to 4)
Green Beans (if canned drain before using)
Butter or Margarine or Marinade
Worsctershire Sauce
Cayenne Pepper (spice)
Salt (can use seasoning salt)
Black Pepper
Paprika (spice)
Curry (spice)
Parsley (spice)
Onion salt (not necessary I use it sparingly)
You will also need:
Baking pan
Aluminum Foil
Oven (you can also make this on a grill if it’s too hot for an oven or you just want a slight variation)
Something to flip fish (sturdy spatula)
I also like to use a timer (as to I am very forgetful and don’t want my meal under o over cooked)
Directions:
You can use the ingredients in a way that is most accommodating to your taste buds. I like spiciness and lemoniness (I know that isn’t a real word lol but I likes what I likes) and prepare it so.
                First I make sure my fish is thawed and that my pan has been foiled and that that foil does not have any holes in it because I want my fish to be able to marinate and remain tender amidst  all of the seasonings, lemon, butter and sauce. I then put the fish into the foil, preheat the oven at 350®F and begin to season.
                I like to add the cayenne pepper, black pepper and salt first because I like a certain amount, I don’t want either to drown out the other flavors(and they will, I don’t want it TOO spicy or TOO salty). However, I want to be able to taste the cayenne as my main spice. Therefore, if I put too much I can rinse and reapply. Everything else I use quite sparingly.
I then lightly sprinkle (and I do mean lightly) with the onion salt (again this spice is not necessary) paprika and curry, roughly the same amount. I then generously add parsley flakes (this can either be dry from a spice bottle or freshly cut yourself). Flip the fish over add thin slices of butter (I cannot say an amount because it depends on the amount and size of your fish- use I little more than I did if you are using chicken breast as they are typically thicker than fish) and repeat the seasoning process.

I then cut my lemon (a 65:35 ratio cut) and squeeze lemon juice onto my fish generously (or to your own liking). I then go back to my lemon cut a thin slice and cut that slice in half (using one half of that slice per piece of fish) and lay it directly on top of my fish. Then I cut three thin slices of butter and lay one piece at the top end of my fish and at the bottom end of my fish and then the third directly on top of my lemon slice.

I add my green beans(with chicken breast I prefer spinach) to either side of my fish (not on top) and then add enough Worshctershire sauce (also not on top of fish) so that it lightly coats the bottom (but not so much to where I can’t clearly see the bottom- remember you have already added butter).

I then close my foil by taking either side, bringing them together and rolling them down so that most of the steam will be locked in (this will also help to seal in the flavor). I let it bake at 350 degrees for about 15 – 20 minutes pull it out, open my foil, flip my fish, squeeze a bit more lemon juice onto it, close it back up and then let it bake for another 15 minutes (about 20-25mns for thicker meats like chicken breast). Take it out, let it cool and EAT!

(One last tip: taste your fish after you have removed it from the pan and before you toss the “marinade” so that if you think you want to, which I do, you can pour a little over your fish and beans :D Happy Eating)

(My quick tip for the chicken and spinach) Eat the spinach and the chicken in one bite. The moistness of the spinach really helped to combat that dryness of the chicken and just make those seasons pop and the chicken melt in your mouth!

My own feedbacks here, the picture of the chicken looked good and based on the plate with the chicken I would have guessed that the meat looked a little dry! Thankfully she suggested eating the quicken and spinach in one bite. For someone like me there would be 2 issues! I can't stand spinach and I like food moisted! So the spinach would be a a deal breaker for me and I would come up with a nice sauce to eat my baked chichen with. My side dish of choice would have been some " pomme de terre sautee" Sauteed potatoes!
The fish and lemons look yummy right? It's hard to go wrong with butter and lemon and you can easily fix a lemon butter sauce to be a great addition on the other sides  that might accompany your fish/meat.

Good health and choices from a natural's perspective

Eating healthy is becoming more an more important to some people and it doesn't matter what age we are or what culture we belong too, it's just smart to eat healthy and make other healthy choices. Today I wanted to share a recipe by a friend who goes by the name of Apple! She's a natural and one of her favorite thing to cook/eat is a baked fish dish that she concocted the first time she decided to bake some fish! Below are a  few pictures of her fave homemade "Lemon spice baked fish" and more about her. "I am a 21 year old undergrad student who is currently working on a bachelor in psychology and associates in biology and sociology. I like this recipe because I really like fish, and seafood in general. I also really like citrus and to be able to taste the seasonings working with the fish and the lemon juice. However, being that I am black the people around me don’t often bake their meats but I really like to figure out ways to eat meat without having to fry it. I also really like to taste seasoning because I have a sensitive palate so that is another reason I prefer for my meat to not be smothered in grease. Now mind you I do like my fried chicken haha but I just prefer to not fry (not to mention I have always been cautious of grease popping because it gets me every time).

I don’t have a special diet, just try to be healthy and eat a lot of fruits and vegetables  because I like a lot of junk type foods haha, mainly potato chips and ice cream, every here and there I get a special craving for something more pastry like. However I am blessed to be a mesomorph, which is a body type. A person with a mesomorph body type can easily gain muscle but can also easily gain fat so I generally weigh about the same weight, within 15lbs, since I was a freshman in high school. I usually either am gaining muscle and loosing fat or losing muscle and gaining fat, I may also be a bit of ectomorph because I usually only gain a certain amount of fat.
Although I prefer to exercise regularly college and work get busy and life gets you distracted, hence the weight fluctuation, but in general I am a healthy person who tries to appreciate my body and treat it right so that it will treat me right. Other than that I like all types of exercise, although I rarely if ever weight train. My favorite forms of exercising are yoga, Pilates, and dancing.
I recommend the same thing everybody recommends which is to try to maintain a high fiber but balanced diet, because even too much of a good thing can be a bad thing, for instance oil.

Good eat: Homemade quick dinner : A vegetarian dish with mushroom and herb pasta dish

Hello dear!

Today I wanted to talk food! If you are a regular around here you already know that tasty food and meaningful eating is one of my passions (smiles)! So I simply wanted to end this week by sharing a simple dish that I find myself making quite often lately, and for good reasons!
1) My husband and children love it!
2) The ingredients can easily be "prepped" ahead of time!
3) Most of the ingredients can be precooked and refrigerated or even frozen!
4) Either I cook it from scratch or precook some ingredients, the dish is simple and quick to make!
5) The dish is versatile and can include any meat/seafood of your choice or nothing but herbs.
6) This dish is an excuse for me to use my fresh herbs and fill the house with the natural and wonderful aroma of nature's best culinary herbs!






The dish I am sharing was made with:
oil
precooked pasta
1/2 pack of mushrooms
1/2 tomato
1/2 green pepper
some fresh and dried herbs such as basil, rosemary, thyme, parsley,oregano,cilantro
garlic
salt


Off to a great start: Culinary herbs from my kitchen garden!
I selected the following from my herb garden: Basil,thyme,rosemary,oregano. It always smells good when I chop them...
 I am getting things set up by having sort of a " Mise en place"! I have already washed my tomato and green pepper with a mixture of water and white vinegar. I actually rinsed my herbs with the same solution even though my herbs are from my own kitchen garden I still rinse everything! No E-coli in this kitchen because I am a stickler on rinsing everything I use! Even if what you purchase is prepackaged you should still rinse before cooking/eating because you don't know how well it was rinsed! Better safe than sorry!


I put a little bit of oil in the wok, once it's hot it's time for my mushrooms...

 Under normal circumstances I would have added some fresh garlic, everything taste greater with garlic, if you ask me. I held off on the fresh garlic because I am pregnant and I am taking it easy on the strong flavors!

 I throw in the pasta, spice them with some more herbs and add a little bit of salt. I mix it all up and work it really good!
The herbs I selected are dried herbs from my spice cabinet that I also call my natural medicine cabinet. They are : dried parsley, Italian seasoning, dried oregano and dried basil, humm...the food looks so colorful and will taste pretty flavorful.

The pasta were precooked a few days before and refrigerated! Thankfully I saved time that night.
A few evenings prior to fixing this dish I actually fix the same dish with just a minor difference. Days before I used some precooked onions,mushrooms and green peppers.



 I did not add tomato to the dish on that night so I added some oil to the pasta as I was mixing my dried herbs. This time around, by having some tomato in it, it created some 'juice' to my dish and kept me from adding olive oil when mixing the dried herbs in.
Here, even though I saved time on the pasta, I still had to make everything else from scratch!

Try it and tell me what you think! There's nothing like some fresh herbs to take a simple dish to the next level!
Like I mentionned earlier, I fix some variations of that dish quite often for my husband and oldest son who love the fresh herbs in the pasta. Some days I add meat, or shrimp ,most days it's just herbs alone in the pasta. We rarely eat meat so we are cool with a pescetarian or vegetarian version! With the right seasonings the dish is still very tasty! I just use whatever ingredients I have and adapt my dish to what's available! I can do without any meat or seafood as long as I have the fresh and dried herbs! Thanks to my kitchen garden I no longer lack fresh herbs!

There was a time, years ago, when I would easily get  frustrated for not having any herbs while cooking. I would be cooking something and need some herbs for a dish but lacked the time to run to the store or would have to spend a lot to buy a bunch when all I need was a few leaves! Having a herb garden for the past 4 years have made cooking more fun and delightful! During the winter I cut most of my plants and freeze some herbs to make sure that I still have some to enjoy during the cold weather.

Good Eat: Bahama Breeze's seafood paella & a little more...

Hello Everyone...
 I hope you all had a great week-end! I know I did...(smiles).My last post was about food and this one is about food as well. I do have a lot of other things I plan on sharing with you soon, very very soon so make sure to become a Follower and a subcriber if that's your first time here.

Even though I wrote about making beef brochettes in my last post, you should know if you are familiar with this blog, that I am more of a pescetarian and I very rarely eat meat. So true to my gastronomic passion I am talking today about seafood...seafood at....




I was in Atlanta recently celebrating my 10 years wedding anniversary and I finally had the chance to try a restaurant I have been wanting to try all the years I have lived around the Atlanta GA area. So after shopping at some stores on Barrett Parkway in Kennesaw GA, my husband and I had a late lunch or early dinner, depends on how you see, at Bahama Breeze!

The setting is refreshing, relaxing, and very different from conventional restaurants.
 Under normal circumstances I would have had more pictures of the interior and I would have elaborated on the tropical setting, the fun music played by a Live artist outdoors and the fun tropical uniform the servers had on...but today I will just talk about food, maybe at my next visit there I will take more indoors pictures for our enjoyment. For now we are talking Good Eat!
My husband loves  Sweet Tea but even our server told him that their sweet tea are awful. Hubby insisted on having some Sweet Tea but soon decided to order the same thing I was having because it was amazingly delicious.My beverage was a refreshing and perfect Strawberry Lemonade! I love Sweet Tea but given the options I am more a lemonade person and I love Strawberry Lemonade because I find it to have more 'texture' than a regular lemonade or a Rapsberry lemonade!

 For appetizers I selected some broiled shrimps served in a buttery sauce with French bread for dipping. It was soooo gooood! Sorry I don't remember the exact name of my selection but here is what it looked like...

We completed our meal by sharing a Seafood Paella! I love love love Paella! I had many friends from Spain back in college so I naturally fell in love with Paella. It had been years since I had one and it was great to enjoy some this Saturday!

Now, there's something I have to say about this...it's a seafood Paella and the original dish on the menu is made with a little bit of sausage in addition to the seafood. I do not eat sausages so I could request to replace the sausage with an extra something else. I simply asked for extra seafood!  The dish can be eaten with some hot sauce if one loves spicy food.I added a little Tabasco sauce that definitely gave this already delicious dish, an extra omp!
Well, that was it for my delicious meal at the pleasant, fun and relaxing Bahama Breeze!


Oh...You might have noticed...this Seafood Paella was served with oysters...I ate most of the oysters and only hours later did I realize that true to the myth oysters could be an aphrodisiac! Did you know that oysters are listed as one of the top aphrodisiac foods? I have been meaning to write a post about this for a while now, so today will be kind of an intro!!!

Have you noticed how in some movies two people would have a romantic moment eating some oysters...Did you watch the movie JUMPING THE BROOM? Do you remember the scene where in the kicthen Meagan Good is asked by the chef to taste some oysters...

 I believed the moment I watched this scene that the chef knew exactly what he was doing when he asked her to come in the kitchen to taste something for him...Well oyster as an aphrodisiac might be fact or fiction depending on how you see it! The scene I am referring to certainly tries to hold to the myth! If you have not seen the movie I will not spoil the fun so go watch it and come back and comment about it!


So...hint hint here: if you plan a romantic dinner with some very specific intentions...oysters should be on the menu...just saying...according to the myth...it's worth trying right?




We did more shopping after eating and funny enough at the end of the day I realized that I did not buy a single pair of shoes or even some new outfits. I checked in the hotel with bags of books...yes...crazy right? Bags of books! Waldenbooks had some sales and I splurged...on books...
I think a good meal, some good books and a nice comfy hotel suite are very simple and yet very pleasant ways to spend a relaxing week-end...humm that's not exactly all... but saying more would be beyond the scope of this blog!
All I can say is...beware of delicious Seafood Paella because according to the myth Oysters do come with side effects. The kind no men complain about...

Me personally I did not complain about this sweet peacefully room away from the kids and...

Good eat: Great fish dinners when dining out @ J.Alexander's restaurants

If you have visited this blog before you might be aware of  the fact that my diet is predominantly pescetarian . I eat other kind of meat but I have a preference for Salmon and other kinds of fish. A few weeks ago I interviewed Kayla and asked her if it was easy to eat out with a pescetarian diet.
I found that it is indeed very easy to find healthy food when eating out.
This week-end, like most week-end, I ate at my favorite establishments.

J.Alexander's restaurant had been my favorite restaurant since the day my husband and I relocated here. The staff there is more like family to us and we are always offered the best hospitality one can ask for.
The picture below is the Fish tacos. It comes with 3 tacos filled with Cole slaw, topped with fresh avocados. It comes with a spicy mayonnaise, a side a beans and a side of delicioooouuuus rice! This is the best rice I had! The flavor...hummm just squeeze some lime on top and your palate will be soooo grateful!!!

Since I can't eat all that, I generally eat 1 of the 3 tacos and the side of rice and my hubby eat the beans and other tacos. For $15 dollars you get a very tasty meal that you can split! 
I must mention that they offer good freshly baked croissants  as you wait for your meal and the foccacio bread available with  or without melted cheese can easily fill you up before you even get to your meal. So J.Alexander is my Friday or Saturday spot.  We used to go there every Sundays as well, but since we started eating at F2O 4 weeks ago we have decided to make F2O ," Fresh 2 Order" our  new Sunday spot.




Below is a picture of my typical Sunday's lunch at F2O. I bragged about their Salmon sandwich in one of my previous post. On Sunday Kids eat free at F2O so it's always packed there and finding a seat there on a Sunday is almost like looking for the best seat at a concert and for very good reasons.

The kids 's meals are very nutritious, they offer quite a diverse selection and their mashed potatoes is the most delicious I ever had in a public establishment! In spite of the fact that it gets crazy in there on Sundays, my hubby and I are now faithful patrons because a couple of the guys working there have succeed to make us feel at home. They work hard on getting us a table as soon as they notice our presence and this too me is special! To top it all they always have so smily faces and are full of energy. Who doesn't love great customer's services?! Well, the right place and service make the food yummier (smiles) !!!



Food is a love affair for me. I enjoy the hospitality and the service I receive when I eat out. I love to cook but I also love to be served. Since I take care of my family by homeschooling and the other responsibilities that come with the territory of being a mom and a wife, I greatly enjoy eating out at those places on the week-end. 

Obviously I love to eat and it's great to be able to eat healthy food, on a reasonable budget and in a very pleasant and loving atmosphere.

Why eat salmon?! A little introduction to the benefits of Salmon and roles of some vitamins



Salmon is one of the most nutritious and delicious food on the planet and it seems that some people who don't even like fish would admit to liking Salmon. It's available fresh, frozen, smoked or canned. It's loaded with beneficial properties as it  has lots of vitamin D,selenium, B vitamins like Niacin,  vitamins B6 and B12, magnesium, as well as the prized Omega-3 fats.
Well you just read that and might still asked yourself: " Well, so?!!! What's the big deal if I don't eat salmon?! "  Well I think that sometimes when we know that things are good for us, we might not eat them because we don't fully realize what exactly they do for us. So I wanted to explain a few of  the benefits of some of those vitamins and minerals that are available in salmon so that when you hear about those vitamins/minerals available in salmon or in other food you might ( I hope) be more motivated to add them to your diet.

Selenium plays an important role in the prevention of generative disease such as cancer, inflammatory diseases, neurological diseases, cardiovascular diseases, infections and aging.
Vitamin D's major role is to maintain normal blood levels of calcium and phosphorus. Vitamin D aids in the absorption of calcium, helping to form and maintain strong bones. Recently, research also suggests vitamin D may provide protection from osteoporosis, hypertension (high blood pressure), cancer, and several autoimmune diseases.
 Magnesium's benefits are many and include solving or preventing osteoporosis, heart attacks, hypertension, constipation, migraines, leg cramps, kidney stones, gallstones and more. I have heard before that if someone wanted to never be constipated again they should add some magnesium to their diet!

     Nota Bene: Just for the record , I did not eat those chips !!! That was my hubby's tray and I had water with my order! The proof is on a picture below! ha ha! My order that day came with a corn chowder soup! Vitamins B or not you will be greatly happy after eating that sandwich. Went with friends last Sunday, I ordered the same sandwich and a salad this time and the friend who took on my recommandations to try the sandwich was all "Hummm this is gooood Hmmmm.." in a delighted Cuban accent! He was so happy!!!!

B Vitamins are mood boosting vitamins and can ease stress, treat anxiety and depression, aid memory, relieve PMS and reduce heart disease risk.
Niacin is actually vitamin B3. It greatly helps with the reducing and controlling high cholesterol levels  and is also known to benefits our bodies in maintaining a healthy skin condition and good blood circulation.  Niacin helps in maintaining good brain function, it boots memory power and it also can aid the digestive tract to absorb sufficient carbohydrates,fats and proteins.
Vitamin B6 also known as pyridoxine, helps brain function and helps the body convert protein to energy. It works with Folic acid and vitamin B12.
Vitamin B12 is often called the "energy vitamin" of the Bvitamins as some athletes or people with low energy often talk of needing a B12 injection.  Apparently clinicians use B12 injections to assist people  with low energy level and to support their nervous system.  B12 injections is more common among people suffering from pernicious anemia as their body can't absorb it from dairy products or other foods.

B12  might also be important in the production of neurotransmitters such as dopamine and serotonin. B12 can even be associated with weight loss due the fact that it increases our energy and metabolism when consumed daily.The vitamin B12 is actually called cyanocobalamin or just cobalamin because it contains the metal ion cobalt. B12 can help keep your mind, heart and nerves healthy! Your body needs this vitamin to make blood cells and maintain a healthy nervous system. B12 also helps with the synthesis of both fatty and amino acids.



Well, this is just a little introduction. Vitamins and minerals both work so mysteriously in term of their beautiful role and efficiency in our bodies and salmon is "loaded". I think that in knowing some of the major benefits of those vitamins and minerals it become more clear as to why/how eating some salmon (preferably wild salmon) at least twice a week could be so important to our health.

I don't know if it's the B vitamins in the salmon that boost my mood but I am always happy eating that sandwich! The truth is I love good food so just smelling a dish and thinking of the flavors will boost my mood!

"Switching to a pescetarian diet".
Due to the fact that few people are pescetarian,  I interviewed Kayla with the intention of shedding more light on the subject. Please read the previous post " Switching to a pescetarian diet" where I explain what it means to be pescetarian and share a portion of Kayla's post " Switching to a pescetarian diet".

GHD: What made you decide to be a pescetarian? Did you do it for weight loss or for its health benefits?! What attracted you the most to that diet?
Kayla: I became a Pescetarian after really researching HOW our meat is made. It's pretty unappetizing. I did it more because of how the animals are killed and not so much the fact that they are killed. People have been eating meat since the dawn of time, but now that mass production and money is involved its a whole different world. They pump our meat full of hormones and slaughter the animals in mass manufacturer style. The way fish "go" didn't bother me as much and I know they have a 3 second memory. As far as the weight thing--because many people feel like they'll drop a few pounds--I am the same weight as I started. You've gotta be healthy and eat a diverse diet with vitamins included to be a healthy Pescetarian.

GHD: How long have you been a pescetarian?
Kayla: I have been a Pescetarian for a year and some change. Before being a Pescetarian I was a 'flexitarian'. I ate a vegetarian diet Monday through Friday and only consumed meat on the weekends. I fell off of this and then went into Pescetarianism almost a year later.

GHD: What dish do you like to cook?
Kayla: I absolutely adore cucumber stir fry with tofu. I used a cucumber stir fry recipe from Food.com and substituted the meat for tofu.

GHD: How do your friends react when you eat out with them? What kind of reaction do you get when you ask for fish when there is little option.
Kayla: My friends are totally cool with it. My roommate is a Vegetarian and has been for over 10 years and my other friends willingly eat my food! I don't really announce that I'm a Pescetarian though. I think when you draw attention to or label something you are asking for other people's comments, judgements, etc. Most people don't even notice anything is different. However, THERE WILL BE IGNORANT PEOPLE who turn their nose up at your food just because you say that it's meatless or who will make dumb comments.

GHD: Do you find it hard to eat out with a pescetarian diet? Is there a restaurant chain that you frequent often that have a great dish that you will recommend? What local place ( and what dish)  in AL would you recommend any one visiting or living there to try?
Kayla: I don't find it hard to eat out at all. I don't do it often enough to have favorites, but its not a problem when I do. I am a Pescetarian so I'm willing to eat fish which is on just about EVERY menu. However, most of my meals are 100% meatless. I'll just order something off of the menu that usually has meat and ask that they remove it. I've also ordered burgers without the meat patty and if you look really hard at the menu in big chain restaurants they often have a veggie burger on the menu! I love a good Burger King Veggie! Now, Alabama is the home of barbecue, pork rinds/cracklings/chicherones, shrimp, and boiled peanuts. The last two are the only "Pescetarian friendly options". I love shrimp and my Vegetarian roommate can't get enough of those peanuts!

GHD: How has the switch helped you and improved your health, your life?
Kayla: My health may be a mental thing, but since switching to a Pescetarian diet I just feel lighter. I know that heart disease and high blood pressure are prevalent in the African American community and my chances are lowered with this diet. I also know that I'm not getting any weird animal hormones. lol.

Switching to a Pescetarian Diet

                                    

For many years now my diet has consistenly involved more fish than any kind of meat. However, I never considered converting to a Pescetarian until recently.  For those of you unfamiliar with the term Pescetarianism or Pesceterian,  Pescetarianism is the practice of a diet that includes seafood and excludes other animals.In addition to fish and/or shellfish, a pescetarian diet typically includes some or all vegetables, fruits, nuts, grains , eggs and dairy. The  Merriam- Webster dictionary dates the origin of the term "pescetarian" to 1993 and defines it to mean: "one whose diet includes fish but no meat".                         
  Since I intend to share more about that diet and that I am considering making the change eventually (smiles), I asked a  fellow blogger who made that switch to place here her post on "switching to a Pescetarian Diet". 1. ESTABLISH WHY YOU REALLY WANT TO DO THIS
When I first modified my diet, I was a flexitarian or someone who still eats meat--any sort--at times. After a while I forgot why I was even doing this and fell off. If you don't have a strong connection to why you are changing a big part of your life--and eating is BIG, then you too will fall off.
2. TAKE IT ONE STEP AT A TIME
If you know you can do it in one big step, do it! However, some people find it more comfortable to glide into change. Start with cutting out one group of meat, then another, and another until you reach your goal.
3. CHANGE YOUR MINDSET
If you think of the things that you are no longer eating as "stuff you can't eat" then you will feel like you are missing out. Change that statement to "stuff you don't want to eat". It sounds small, but it is a big deal. Trust me.
